Meet 9-year-old Emilia Gajano-Blythe, from Oakland, CA. Emilia loves to cook and she is really good! I’ll never forget the first time I tried Emilia’s cooking, I was picking up my daughter from a play date she was having with Emilia’s sister. My oldest daughter and I had just pulled up to her house when at the same time we said, “Wow something smells good!” We walk in her house and automatically our mouths started watering. I walked in to the kitchen and there was Emilia in her chef hat and apron and I was floored! Her mom, Jane, asked if we wanted to stay for dinner, trying to be polite I said no that’s ok, and then she said “are you sure?” and I said “ok!”
That was a year ago and I can still remember how delicious everything was and how impressed and proud I was of Emilia, and I sill am!

How old were you when you started cooking? I was 5.
Why do you like to cook? I like to cook and bake because it makes me happy and other people happy. I express my love for people through my cooking and I come from an Italian family.
Do you think cooking your own food helps you eat well? Definitely because its all fresh ingredients but baking is a different story.
What are your favorite foods to cook with? I like to make different dishes with Chicken, sauces for pasta, and I love to bake cakes, cupcakes and cookies.
How often do you cook? Very often, almost everyday.
What tips would you give other kids about cooking? Never give up, try your best and read the instructions very carefully because if you make a mistake by mixing in the wrong amount, it might not turn out the way you expected. 🙁
Here is the recipe for the wonderful dish I had at Emilia’s house a year ago!
Emilia’s Chicken Cutlets
2 pound organic chicken breast
2 cups flour
2 tsp. salt
1 tsp. pepper
4 cups Panko
4 cups canola or vegetable oil
2 lemons – cut wedges
Rinse off chicken breast and pat dry and slice to a quarter inch thickness. Separate flour, eggs, and Panko into three separate bowls. Put 1 tsp. salt and pepper into egg mixture and 1 tsp. of salt into the flour mixture. Dip your chicken into flour and dust access off. Dip into egg mixture. Dip into Panko. Heat up oil unit very hot and then put in the chicken cutlets until golden on each side. When ready put onto a plate covered by paper towel to help soak up the oil. For extra flavor squeeze lemon wedges over cutlets.
