My 8-year-old daughter and I just had a spontaneous Kids Cook Monday! We made spaghetti with lemon zest, Italian parsley and garlic (all from our garden) and homemade turkey meatballs with organic free-range ground turkey. We also made, our new favorite beverage, watermelon shakes with mint! She was so happy cooking with me and so proud of the outcome, which was delicious by the way!

Meet 9-year-old Emilia Gajano-Blythe, from Oakland, CA. Emilia loves to cook and she is really good! I’ll never forget the first time I tried Emilia’s cooking, I was picking up my daughter from a play date she was having with Emilia’s sister. My oldest daughter and I had just pulled up to her house when at the same time we said, “Wow something smells good!” We walk in her house and automatically our mouths started watering. I walked in to the kitchen and there was Emilia in her chef hat and apron and I was floored! Her mom, Jane, asked if we wanted to stay for dinner, trying to be polite I said no that’s ok, and then she said “are you sure?” and I said “ok!”
That was a year ago and I can still remember how delicious everything was and how impressed and proud I was of Emilia, and I sill am!
Here is her interview:
How old were you when you started cooking? I was 5.
Why do you like to cook? I like to cook and bake because it makes me happy and other people happy. I express my love for people through my cooking and I come from an Italian family.
Do you think cooking your own food helps you eat well? Definitely because its all fresh ingredients but baking is a different story.
What are your favorite foods to cook with? I like to make different dishes with Chicken, sauces for pasta, and I love to bake cakes, cupcakes and cookies.
How often do you cook? Very often, almost everyday.
What tips would you give other kids about cooking? Never give up, try your best and read the instructions very carefully because if you make a mistake by mixing in the wrong amount, it might not turn out the way you expected. 🙁
Here is the recipe for the wonderful dish I had at Emilia’s house a year ago!
Emilia’s Chicken Cutlets
2 pound organic chicken breast
2 cups flour
2 tsp. salt
1 tsp. pepper
4 cups Panko
4 cups canola or vegetable oil
2 lemons – cut wedges
Rinse off chicken breast and pat dry and slice to a quarter inch thickness. Separate flour, eggs, and Panko into three separate bowls. Put 1 tsp. salt and pepper into egg mixture and 1 tsp. of salt into the flour mixture. Dip your chicken into flour and dust access off. Dip into egg mixture. Dip into Panko. Heat up oil unit very hot and then put in the chicken cutlets until golden on each side. When ready put onto a plate covered by paper towel to help soak up the oil. For extra flavor squeeze lemon wedges over cutlets.
I love to cook and I love to eat (maybe even more than I love to cook), so kids who cook and really enjoy it always impress me! For that reason, I‘ve decided to dedicate a space on my blog to share stories, interviews and blogs about kids who cook! It is my hope that these kids will help inspire more kids to cook and enjoy the process of preparing healthy, delicious homemade food!

Hi Everyone! This is our last “Kids Cook Monday” recipe “Green Onion and Parmesan Cheese Risotto“. It was our plan (the girls and I) to try cooking together for the month of January only, but we had so much fun with it we decided to keep it up through February. I must say that it has been so much fun cooking with my girls and I can honestly say they have enjoyed it too! Don’t be surprised if you see a recipe pop-up here or there on a Monday in the months to come!

Green Onion and Parmesan Cheese Risotto
(adapted from Very Easy Risotto recipe from allrecipes.com)
Prep Time: 10 Minutes
Cook Time: 30 Minutes
Ready In: 40 Minutes
3 tablespoons butter
2/3 cup sliced green onion
2 cloves of garlic
1 1/3 cups uncooked Arborio rice
4 cups organic chicken broth
3/4 cup grated Parmesan cheese
1/4 teaspoon ground black pepper
1. Melt butter in a large skillet over medium-high heat. Cook green onions and garlic in butter briefly, then add the rice. Cook and stir for a few minutes to toast rice. Stir in chicken broth and pepper. Bring to a boil, and then reduce heat to medium-low. Cover, and simmer for 20 minutes.
2. Remove from heat, cover, and let stand for 5 minutes. Stir in the Parmesan cheese.
Today we are cooking something quick, easy and healthy – Mac and Cheese! Yes! Here is a stove-top Mac and Cheese recipe that is just over 300 calories from MyRecipes.com.
Success the “Three-Cheese Lasagna” turned out great! We were so excited to start eating that I forgot to take pictures! I want to share with you that the girls and I had initially decided to try “Kids Cook Monday” for the month of January only, but we are having such a great time cooking together that we are going to keep it up through February maybe longer.
Here are some of the reasons why my kids want to keep cooking on Mondays, they told me this tonight:
- We look forward to trying something new every Monday.
- We like looking for new recipes.
- It’s fun to eat what we cook.
- We like cooking with you (I really like this one!).
- Food taste better when we cook it at home.
For these reasons we will keep on cooking on Mondays!

The Kids Cook Monday recipe is “Three-Cheese Lasagna” from MyRecipes.com. This should be interesting because this is only the second time I am attempting to make lasagna. This time I will have two helpers, ages 8 and 10, so I am confident it will turn out fine, right?
