Super Easy Mashed Potatoes










3 medium potatoes, whole or halved

Chicken Broth

¼ cup milk

4 tablespoons of butter

¼ tsp. salt

1 pinch ground black pepper

Green onions for garnish


Cover potatoes with chicken broth or water or both in a large pot. Bring to a boil over high heat. Reduce heat to med. low or low and simmer uncovered for 20 or 25 minutes or until potatoes are very tender; drain.

In a small saucepan over low heat, combine the butter and milk and heat until the butter is melted and the mixture is hot.

Drain the potatoes, transfer to a warmed bowl, and mash well with a fork or potato masher.

Add the butter mixture to the potatoes and stir until smooth.

Season with salt and pepper and top with chopped green onion.

Health Tip: Leaving the skin on the potatoes provides fiber and helps preserve the nutrients in the potato’s flesh
